Pendara in the village: From the rural community to the city plate

With this grant, the LocalFood.bg Foundation will test a new community-based model for helping rural communities around the country attract culinary and rural tourism. This will involve helping them launch businesses for artisanal food production and develop menus featuring local foods. The program will be piloted in three communities: the village of Smilyan (with a focus on producing canned Smilyan beans); the village of Mogilitsa (production of hand-made couscous and “tripe cheese” using a centuries-old recipe is envisioned); and the village of Chiprovtsi (where a local variety of pastry dough will be the focus of efforts). Another four rural communities will be selected after an open request for proposals.
