The project is implemented in partnership with University of California, Davis and provides an opportunity for leading researchers from Bulgaria and USA to collaborate, exchange knowledge and expertise, and join their efforts in the field of functional foods development for improving consumers’ quality of life. It will provide unique knowledge on the molecular characteristics of a commercially-relevant probiotic L. Bulgaricus strain originating from Bulgaria revealing the effect of various factors on the survivability of a mixed probiotic culture in dry products. Outcomes of the project will include improvements in preservation methods to maintain probiotic strains viability and ultimately the function of this organism as a probiotic in the human gut.
